Bacon & Egg Veggie Scramble

Ingredients Needed
  • 2 eggs
  • 60 gms WW cottage cheese
  • 4 broccoli florets broken into small pieces
  • 60 gms ham or bacon
  • 4 Cherry tomato cut in half
  • 2 yellow squash sliced thinly
  • 1/2 cup sliced mushrooms
  • 1/4 small Spanish onion diced
  • 3 second olive oil spray
  • Salt & pepper
How To Create
  1. Whisk egg & cottage cheese together
  2. Slice & dice all the vegetables, plus ham (or bacon)
  3. Preheat a non stick pan, spray with oil and sauté veg until tender (approx 5 mins)
  4. Add the eggs/cottage cheese mix, and stir until cooked through (approx 2 mins maximum),
  5. Season with salt & pepper
