Prosciutto wrapped Chicken Breast with Sweet Potato Mash, Broccolini & Sweet Corn.

- 1 medium Chicken Breast
- 2 slices of Prosciutto
- 1 cup steamed or boiled mashed sweet potato seasoned with salt and pepper
- 1/2 bunch Broccolini steamed
- 1/3 cup steamed corn kernels .
How To Create
To prepare chicken, wrap 2 slices of prosciutto around, and grill seam side down first, then flip and cook the other side.
Cooking times will depend on the thickness of your chicken breast, the prosciutto should be crispy when cooked.
No oil is needed if you use a non stick griddle pan.
