small red apple sliced

sticks celery chopped

flat leaf parsley chopped

cherry Tomatoes halved

walnuts
Sliced red onion
Dressing

Tbls
Yopro plain yoghurt

Tbls
lemon juice
1
tsp
wholegrain mustard
Salt & Pepper
Water to thin mix if needed
Instructions
Mix all dressing ingredients together and set aside.
Shred, or chop chicken, add all other ingredients and toss together.
Add dressing and toss again
Spoon mixture over a bed of fresh rocket & spinach.
