In a rectangle 2lt capacity deep glass Pyrex dish, spread a layer of pasta sauce,
Add 1 sheet of fresh lasagne over that
Add another layer of pasta sauce
Then layer roasted pumpkin rounds slightly overlapping each other
Use the second sheet of lasagne over the top
Next add more sauce, then another layer of pumpkin, continue layering, finishing off the layers with a fresh sheet of lasagne, more sauce over the top, and sprinkle with cheese.
Bake in a 200c oven for 30-40 minutes uncovered or until cooked through.
