Ingredients

small mini gold sweet potato
up to 130gms

eggs
50
gms light shaved ham
Asparagas
Cherry tomatoes
Instructions
Prick the potato with a fork a few times and microwave for (2 mins 50sec in my microwave)
Cook the tomato in the oven on 200c for 5-8 mins
Grill the Asparagus
While that’s cooking, whisk eggs with a little water, salt/pepper and fresh parsley leaves
Chop the ham, heat up a non stick pan, pop the ham in and warm through
Add your eggs, stir until just cooked
At this stage everything else should be cooked and assemble your meal.
