Season chicken with salt and pepper. Heat a large non-stick frying pan and over medium-high heat, cook chicken for 5-6 minutes on each side, until cooked through and golden. Transfer to a plate to cool.
Add spinach to a large bowl, scatter over mango and onion.
Slice the chicken and add it to the salad, top with chilli and mint.
In a small jug whisk together rice wine vinegar, zest and juice of orange, ginger, soy sauce, maple syrup. Season with salt and pepper.
Drizzle dressing over salad. Top with everything bagel seasoning.
Notes
Chicken can be cooked a day ahead. Dress the salad before serving. Bagel seasoning can be found in most major supermarkets in the spice aisle.
