It was a winning recipe ringing in the New Year, and I’m sure it will be all Summer long.

𝐂𝐡𝐢𝐜𝐤𝐞𝐧 𝐌𝐚𝐧𝐠𝐨 𝐒𝐚𝐥𝐚𝐝 𝐰𝐢𝐭𝐡 𝐂𝐢𝐭𝐫𝐮𝐬 𝐃𝐫𝐞𝐬𝐬𝐢𝐧𝐠

Ingredients
 

  • 4 medium chicken breasts
  • 2 medium mangos
  • 250 g Baby Spinach
  • 4-5 spring onions
  • 1 whole fresh red chilli
  • 1/3 cup chopped fresh mint
  • 1 medium orange zest & juice

Dressing

  • 2 Tbls rice wine vinegar
  • 2 Tbls soy sauce
  • 1 tsp sugar free maple syrup
  • 1 tsp fresh grated ginger
  • 1 tbls everything but the bagel seasoning
  • Salt & Pepper

Instructions
 

  • Season chicken with salt and pepper. Heat a large non-stick frying pan and over medium-high heat, cook chicken for 5-6 minutes on each side, until cooked through and golden. Transfer to a plate to cool.
  • Add spinach to a large bowl, scatter over mango and onion.
  • Slice the chicken and add it to the salad, top with chilli and mint.
  • In a small jug whisk together rice wine vinegar, zest and juice of orange, ginger, soy sauce, maple syrup. Season with salt and pepper.
  • Drizzle dressing over salad. Top with everything bagel seasoning.

Notes

Chicken can be cooked a day ahead. Dress the salad before serving. Bagel seasoning can be found in most major supermarkets in the spice aisle.
