I had some extra pumpkin cooked and needed using so I made some fritters, and they worked out amazing

cooked mashed pumpkin

self raising flour

Perfect Italiano low fat ricotta
1/2
cup
frozen minted peas
defrosted
1/2
cup
frozen corn
defrosted
2
eggs
Salt & Pepper
1/3
cup
fresh flat leaf parsley
or basil
2
x3 second spray olive oil
Instructions
Mix ingredients together in a bowl, spray a non stick fry pan with 1x3 second spray,
Reserve the other 1x3 second spray half way cooking the batch
Scoop 1/4 cup fills of batter into the pan, cook on one side, flip and cook on other side, repeat until batter is finished, my batch made 13 fritters.
