Sunday Full Breakfast
Ingredients
- 2 eggs + 1/2 Cup egg whites I use puregg
- 4 vine tomatoes
- 60 gms Hans WW endorsed bacon
- 1 Cups roughly sliced mushroom
- 1 Cup fresh spinach
- 2 x 3 second Spray of Olive oil spray
- 1 Tsp fresh basil
- Salt & Pepper
- 1/2 Clove garlic optional
Instructions
- In a large non stick frypan, sprayed with oil spray ( 1 x 3 second spray), sauté mushrooms with garlic, once half cooked, push to one side to continue cooking and add bacon to the other side of the pan, and the tomatoes in the same pan.
- Whisk eggs + whites together and season with S&P, in a seperate pan, spray 1 x 3 second spray of oil spray and cook the eggs, adding Spinach half way through cooking, the bacon, mushroom & tomato should be cooked at the same time as the eggs take to finish.
- Serve with shredded basil scattered over the mushrooms.
