Lasagne - Beef & Roast Pumpkin
You will need a batch of my Low Fat Bolognese Sauce Recipe
Ingredients
- Low Fat Bolognese Sauce Recipe
- 4 Latina fresh lasagne sheets
- 1 medium butternut pumpkin cut into rounds sprinkled with salt/pepper and roasted in the oven (do this in advance)
- 100 gms Bega 50% reduced fat cheese grated.
Instructions
- In a rectangle 2lt capacity deep glass Pyrex dish, spread a layer of pasta sauce,
- Add 1 sheet of fresh lasagne over that
- Add another layer of pasta sauce
- Then layer roasted pumpkin rounds slightly overlapping each other
- Use the second sheet of lasagne over the top
- Next add more sauce, then another layer of pumpkin, continue layering, finishing off the layers with a fresh sheet of lasagne, more sauce over the top, and sprinkle with cheese.
- Bake in a 200c oven for 30-40 minutes uncovered or until cooked through.
