Stuffed Scrambled Eggs & Ham Sweet Potato
With A Side Of Grilled Asparagus & Roasted Cherry Tomatoes
Ingredients
- 1 small mini gold sweet potato up to 130gms
- 2 eggs
- 50 gms light shaved ham
- Asparagas
- Cherry tomatoes
Instructions
- Prick the potato with a fork a few times and microwave for (2 mins 50sec in my microwave)
- Cook the tomato in the oven on 200c for 5-8 mins
- Grill the Asparagus
- While that’s cooking, whisk eggs with a little water, salt/pepper and fresh parsley leaves
- Chop the ham, heat up a non stick pan, pop the ham in and warm through
- Add your eggs, stir until just cooked
- At this stage everything else should be cooked and assemble your meal.
