Stuffed Scrambled Eggs & Ham Sweet Potato

Ingredients
 

  • 1 small mini gold sweet potato up to 130gms
  • 2 eggs
  • 50 gms light shaved ham
  • Asparagas
  • Cherry tomatoes

Instructions
 

  • Prick the potato with a fork a few times and microwave for (2 mins 50sec in my microwave)
  • Cook the tomato in the oven on 200c for 5-8 mins
  • Grill the Asparagus 
  • While that’s cooking, whisk eggs with a little water, salt/pepper and fresh parsley leaves
  • Chop the ham, heat up a non stick pan, pop the ham in and warm through
  • Add your eggs, stir until just cooked
  • At this stage everything else should be cooked and assemble your meal.
