Stuffed Scrambled Eggs & Ham Sweet Potato
With A Side Of Grilled Asparagus & Roasted Cherry Tomatoes
Ingredients Needed
  • 1 small mini gold sweet potato up to 130gms
  • 2 eggs
  • 50 gms light shaved ham
  • Asparagas
  • Cherry tomatoes
How To Create
  1. Prick the potato with a fork a few times and microwave for (2 mins 50sec in my microwave)

  2. Cook the tomato in the oven on 200c for 5-8 mins

  3. Grill the Asparagus 

  4. While that’s cooking, whisk eggs with a little water, salt/pepper and fresh parsley leaves

  5. Chop the ham, heat up a non stick pan, pop the ham in and warm through

  6. Add your eggs, stir until just cooked

  7. At this stage everything else should be cooked and assemble your meal.
