
Bacon & Egg Veggie Scramble
Ingredients
- 2 eggs
 - 60 gms WW cottage cheese
 - 4 broccoli florets broken into small pieces
 - 60 gms ham or bacon
 - 4 Cherry tomato cut in half
 - 2 yellow squash sliced thinly
 - 1/2 cup sliced mushrooms
 - 1/4 small Spanish onion diced
 - 3 second olive oil spray
 - Salt & pepper
 
Instructions
- Whisk egg & cottage cheese together
 - Slice & dice all the vegetables, plus ham (or bacon)
 - Preheat a non stick pan, spray with oil and sauté veg until tender (approx 5 mins)
 - Add the eggs/cottage cheese mix, and stir until cooked through (approx 2 mins maximum),
 - Season with salt & pepper
