Cheesy Rice Slice

A very quick throw together slice using up some leftover cooked rice, turned into a delicious easy meal.

Ingredients
 
  • 1 1/2 cups cooked brown rice or white
  • 3 eggs beaten
  • 2 tsp garlic oil normal works fine
  • 2 tbls grated Parmesan cheese
  • 60 gms Bega 50% less fat grated country cheese
  • 1 red onion finely diced
  • 1 med/large grated zucchini or pumpkin
  • 1 tsp masterfoods Tuscan seasoning
  • Salt & Pepper
Instructions
 
  • Mix all ingredients together
  • Pour into a slice mould (I use a Tupperware silicone one)
  • Bake in a 180c oven for 35-40 mins or until cooked & golden
