Anzac Biscuit

Ingredients
 
  • 1 cup sifted plain flour
  • 1 cup rolled oats
  • 1/3 cup brown sugar
  • 1/3 cup coconut
  • 100 gms butter
  • 2 Tbls golden syrup
  • 1 Tbls water
  • 1/2 tsp bi carb soda
Instructions
 
  • Sift flour to a bowl, add all dry ingredients excluding bi carb soda.
  • To a saucepan add butter and melt, pour in golden syrup & water, once bubbling, remove from heat and add bicarbonate soda, it should be frothy whilst stirring together.
  • Add liquid to dry ingredients, mix well.
  • Roll dough into 30 even balls using a cookie scoop to ensure even sized biscuits.
  • Place on a lined baking try and flatten.
  • Bake at 180c 15-20 mins.
