Chilli Con Carne & Rice

No packet mix here, just fresh ingredients with spices, and the flavour is amazing!

Ingredients
 
  • 500 gms Lean beef mince
  • 2 tbls tomato paste
  • 1 cup water
  • 1 tin chopped tomato
  • 1 beef stock cube
  • 1 tin kidney beans drained
  • 3-4 cloves garlic grated
  • 1 large onion diced
  • 2 sticks celery diced
  • 1 small red Capsicum diced
  • 125 gms sliced mushrooms
  • 3 second oil spray
  • Home made spice mix
  • 1 tsp chilli
  • 1 tsp mixed herbs
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 1/2 tsp all spice
  • 1/2 tsp cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
Instructions
 
  • In a non stock fry pan spray with oil spray, add onion, celery & Capsicum, sauté until soft
  • Add mince & garlic, stir until combined
  • Add spice mix, and cook until browned, breaking up lumps of mince.
  • Add tin tomato, tomato paste, water, stock cube and kidney beans
  • Simmer for 35-40 mins or until mix has thickened.
Notes
Serve with 1/2 cup basmati rice (optional)
If adding rice - an extra 3 WW Smart Points
