Chilli Con Carne & Rice
No packet mix here, just fresh ingredients with spices, and the flavour is amazing!
Ingredients
- 500 gms Lean beef mince
- 2 tbls tomato paste
- 1 cup water
- 1 tin chopped tomato
- 1 beef stock cube
- 1 tin kidney beans drained
- 3-4 cloves garlic grated
- 1 large onion diced
- 2 sticks celery diced
- 1 small red Capsicum diced
- 125 gms sliced mushrooms
- 3 second oil spray
- Home made spice mix
- 1 tsp chilli
- 1 tsp mixed herbs
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1/2 tsp all spice
- 1/2 tsp cocoa powder
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- In a non stock fry pan spray with oil spray, add onion, celery & Capsicum, sauté until soft
- Add mince & garlic, stir until combined
- Add spice mix, and cook until browned, breaking up lumps of mince.
- Add tin tomato, tomato paste, water, stock cube and kidney beans
- Simmer for 35-40 mins or until mix has thickened.
Notes
Serve with 1/2 cup basmati rice (optional)
