Salad - Chicken Waldorf

Ingredients
- 150 gms cooked chicken breast
- 2 medjool Dates chopped
- 1 small red apple sliced
- 2 sticks celery chopped
- 2 Tbls flat leaf parsley chopped
- 4 cherry Tomatoes halved optional
- 15 gms walnuts
- Sliced red onion
Dressing
- 3 Tbls Yopro plain yoghurt
- 2 Tbls lemon juice
- 1 tsp wholegrain mustard
- Salt & Pepper Water to thin mix if needed
Instructions
- Mix all dressing ingredients together and set aside.
- Shred, or chop chicken, add all other ingredients and toss together.
- Add dressing and toss again
- Spoon mixture over a bed of fresh rocket & spinach.
