  • 150 gms cooked chicken breast
  • 2 medjool Dates chopped
  • 1 small red apple sliced
  • 2 sticks celery chopped
  • 2 Tbls flat leaf parsley chopped
  • 4 cherry Tomatoes halved optional
  • 15 gms walnuts
  • Sliced red onion


  • 3 Tbls Yopro plain yoghurt
  • 2 Tbls lemon juice
  • 1 tsp wholegrain mustard
  • Salt & Pepper Water to thin mix if needed


  • Mix all dressing ingredients together and set aside.
  • Shred, or chop chicken, add all other ingredients and toss together.
  •  Add dressing and toss again
  • Spoon mixture over a bed of fresh rocket & spinach.
