A one pan dish that’s easy and delicious for lazy Sundays

Ingredients Needed
  • 2 tins crushed tomato
  • 1 large punnet sliced mushroom
  • 1 large red Capsicum sliced
  • 1 large yellow Capsicum sliced
  • 1 red onion sliced
  • 1 small/med zucchini diced
  • 8 eggs
  • Spray oil 3 second spray
  • 2 tbls fresh sliced basil
  • 2 tbls Fresh chopped flat leaf parsley
  • Salt & Pepper
How To Create
  1. Spray a large fry pan with oil spray, and toss all the vegetables in, add salt & pepper, & cook until soft.
  2. Add the tins of tomato & herbs, and bring to the boil

  3. Make small Wells in the mix and crack the eggs in

  4. Turn down the heat to low, cover and cook until eggs have just set, no longer than 3-5 mins.
