Ingredients
 

  • 2 tins crushed tomato
  • 1 large punnet sliced mushroom
  • 1 large red Capsicum sliced
  • 1 large yellow Capsicum sliced
  • 1 red onion sliced
  • 1 small/med zucchini diced
  • 8 eggs
  • Spray oil 3 second spray
  • 2 tbls fresh sliced basil
  • 2 tbls Fresh chopped flat leaf parsley
  • Salt & Pepper

Instructions
 

  • Spray a large fry pan with oil spray, and toss all the vegetables in, add salt & pepper, & cook until soft.
  • Add the tins of tomato & herbs, and bring to the boil
  • Make small Wells in the mix and crack the eggs in
  • Turn down the heat to low, cover and cook until eggs have just set, no longer than 3-5 mins.

Notes

(2 eggs is a Serve)
