Swedish Meatballs My Way

Ingredients
 
  • 500 gms Chicken Breast Mince
  • 1/2 onion very finely diced
  • 1/2 tsp nutmeg
  • 1/2 tsp all spice seasoning
  • 1 small garlic clove grated
  • Salt & Pepper

For the sauce :

  • 70 ml Bulla light thickened cream for cooking
  • 1/2 cup chicken stock
  • 2 tsp djon mustard
  • 1 tsp Worcestershire sauce
  • Salt & Pepper
Instructions
 
  • Mix all meatball ingredients together
  • Roll into 28 even meatballs (I use a cookie scoop to measure out my meatballs, they weight aprox 20gms per Ball). 
  • Sear both sides of the meatball in a non stick pan (spray oil if needed)
  • Mix the sauce ingredients into a jug, and pour over the meatballs, simmering gently uncovered for 10 minutes or until meatballs are cooked through and sauce slightly thickens.
  • Scatter with chopped fresh parsley before serving.
Notes
Serve with rice, mash (extra sp) or cauliflower rice (0sp) .
2 Weight Watchers Smart Points per serve - 7 meatballs = a Serve
