Swedish Meatballs My Way
Serves 4
Ingredients
- 500 gms Chicken Breast Mince
- 1/2 onion very finely diced
- 1/2 tsp nutmeg
- 1/2 tsp all spice seasoning
- 1 small garlic clove grated
- Salt & Pepper
For the sauce :
- 70 ml Bulla light thickened cream for cooking
- 1/2 cup chicken stock
- 2 tsp djon mustard
- 1 tsp Worcestershire sauce
- Salt & Pepper
Instructions
- Mix all meatball ingredients together
- Roll into 28 even meatballs (I use a cookie scoop to measure out my meatballs, they weight aprox 20gms per Ball).
- Sear both sides of the meatball in a non stick pan (spray oil if needed)
- Mix the sauce ingredients into a jug, and pour over the meatballs, simmering gently uncovered for 10 minutes or until meatballs are cooked through and sauce slightly thickens.
- Scatter with chopped fresh parsley before serving.
Notes
Serve with rice, mash (extra sp) or cauliflower rice (0sp) .
