
Minestrone soup
Ingredients
- 6 cups chicken stock
 - 2 cups water
 - 1 x 3 second Olive oil spray
 - 100 gm of Aldi berg short cut bacon diced
 - 130 gms dry pasta whichever you like
 - 1 can of either Cannellini beans or red kidney beans drained
 - 1 cup frozen peas
 - 1 tin diced tomato
 - 4 celery sticks
 - 4 small carrots
 - 1 zucchini
 - 1 cup green beans
 - 1 cup cabbage shredded or kale
 - 1 large brown onion
 - Fresh basil & fresh parsley leaves as much as you like
 - Salt/pepper
 - Optional chilli flakes
 - 2-3 garlic cloves grated
 
Instructions
- Dice all veg.
 - In a large pot spray olive oil, add onion & bacon and cook until onion is translucent and bacon crispy, add all other ingredients, cook for 25-30 mins or until pasta is just cooked.
