Minestrone soup

Ingredients
 
  • 6 cups chicken stock
  • 2 cups water
  • 1 x 3 second Olive oil spray
  • 100 gm of Aldi berg short cut bacon diced
  • 130 gms dry pasta whichever you like
  • 1 can of either Cannellini beans or red kidney beans drained
  • 1 cup frozen peas
  • 1 tin diced tomato
  • 4 celery sticks
  • 4 small carrots
  • 1 zucchini
  • 1 cup green beans
  • 1 cup cabbage shredded or kale
  • 1 large brown onion
  • Fresh basil & fresh parsley leaves as much as you like
  • Salt/pepper
  • Optional chilli flakes
  • 2-3 garlic cloves grated
Instructions
 
  • Dice all veg.
  • In a large pot spray olive oil, add onion & bacon and cook until onion is translucent and bacon crispy, add all other ingredients, cook for 25-30 mins or until pasta is just cooked.
