
Spinach & Mango with Cashew Salad
Ingredients
- 30 gms cashews
 - 1 bag of fresh Spinach leaves
 - 1 - 2 handfuls of Bean shoots as much as you like
 - 1 large mango sliced
 - mint leaves whole
 - 1/2 pomegranate seeds only
 - 1 small cucumber sliced
 - 5 gms of black sesame seeds.
 
Instructions
- The juice of the pomegranate and mango create enough of a base for a salad dressing, add salt & pepper, a squeeze of lime juice and 2 tsp sesame oil.
