
Greek Chickpea Salad
Ingredients
- 1 x 400gm can chickpeas drained
 - 55 gms cubed South cape reduced fat feta
 - 1 small red onion diced
 - 1/2 punnet cherry Tomatoes sliced in half
 - 1 medium yellow Capsicum diced
 - 70 gms Always Fresh Black pitted olives sliced in half you can use kalamata however you need to check Smart Point values
 - 1 medium Lebanese cucumber sliced
 - 1 Tbls fresh oregano chopped
 - 1 Tbls fresh mint chopped
 - Salt & Pepper to taste
 
For the dressing
- 1 Tsp olive oil
 - 1 Tsp dried oregano
 - 3 Tbls lemon juice more if you wish you can also use red wine vinegar
 
Instructions
- Mix together all the salad ingredients then pour over the dressing.
