  • 6 weetbix
  • 12 big medjool dates
  • 2 tsp pure maple syrup
  • 55 gms desiccated coconut reserve 15g for rolling
  • 1 lemon zest
  • 2 tbls  lemon juice


  • Break down the dates by pulsing in the food processor.Add all other ingredients reserving 15g of coconut for rolling.
  • Blitz until a dough forms
  • Roll into balls then into reserved coconut.
