Biscoff Cheesecake Bliss Ball Bites

Biscoff biscuits are caramelised shortcrust biscuits that are thin, crunchy and taste like cinnamon spice and all things nice.
This cheesecake bliss ball recipe using the biscuits are beyond delicious, these are a family favourite.
Instead of making a full cheesecake that no one can control themselves around, because the flavours beyond yummy, I opted for individual balls, and believe me they don't disappoint.

Ingredients
 

  • 100 gms Biscoff lotus biscuits
  • 130 gms room temperature light cream cheese
  • 1 tsp pure maple syrup
  • 60 gms low fat ricotta
  • 1/2 tsp vanilla essence
  • 2 Tbls almond meal ground
  • 4 Tbls desiccated coconut do not use shredded - you need fine coconut

Instructions
 

  • Add biscuits to a food processor and pulse 3-4 quick bursts to resemble breadcrumbs,
  • Reserve 2Tbls for rolling.
  • Add all other ingredients to the processor and combine.
  • The mix will be soft, they do firm in the fridge.
  • Using a cookie scoop and damp hands, scoop and roll balls, then coat in reserved biscuit crumb, repeat until all mixture is rolled.
  • Refrigerate or Freeze

Notes

I like to serve at room temperature just like cheesecake as the flavour is more intense
(Each ball weighs roughly 17-18 gms)
