Ingredients
 

  • 250 gms corn kernels, tin or fresh
  • 55 gms beg country cheese, 50% less fat
  • 1/2 small red onion, diced
  • 6 eggs
  • 2 tbs self-raising flour
  • 2 tbs fresh thyme
  • salt and pepper

Instructions
 

  • Mix all ingredients together in a bowl and pour into silicone baking muffin moulds, bake at 180c for 25 minutes or until cooked through.
