Muffin - Mug - 90 Second
This is my original recipe there are MANY variations of it that has evolved over time ?? My teens son’s best friend requested this for brunch today! Must be good ? Shhhhh don’t tell them it’s healthy!

Ingredients Needed
  • 1/3 cup quick oats
  • 1 mashed ripe banana or apple cooked and mashed
  • Pinch of cinnamon
  • 1 egg
  • 1-2 medjool Dates chopped
How To Create
  1. Mix together, and pour into a microwave safe mug, rinsed out with boiling hot water or lightly sprayed with oil spray (prevents sticking), microwave for 90 seconds (could take longer depending on your microwave) Mug Muffin is cooked when it comes away from the sides of the mug.
  2. Serve with 99% fat free plain yoghurt , fruit of choice, and sugar free maple if you feel like added yumminess! I used blueberry
