Waffles - Potato
Ingredients
- 200 gms grated Carisma or Spud Lite Low Carb Potato
- 1 egg
- 1 -2 egg whites
- 20 gms Bega 50% less fat country cheese
- 20 gms Don’s honey ham diced
- 1/2 Cup Baby Spinach leaves
- 1/4 Spanish Onion diced
Instructions
- Grate potato & squeeze out excess water in a cloth
- Add potato to a bowl and season with salt & pepper
- Add all other ingredients & stir. (Add extra egg white if needed)
- Preheat a waffle iron, once hot, spray with 3 second oil spray
- Add batter to the waffle iron and cook for 5 mins on high.
Notes
Serve with a dollop of Weight Watchers Sour Cream (additional Smart Points) and a Sprinkling of Chopped Chives
