Fritters - Cheesy Parmesan, Broccoli & Pea
Ingredients
- 200 gms broccoli florets
- 20 gms Parmesan cheese
- 3 large garlic cloves
- 3 spring onions
- 1 cup thawed peas
- 400 gm can drained chickpeas
- 1/2 cup chopped flat leaf parsley
- 2 Tbls cornflour gluten free for my GF friends
- 2 eggs
- Salt & Pepper
- Pinch of chilli flakes optional
- Oil Spray
Instructions
- To a food processor add broccoli, garlic, spring onion & process until fine, add chickpeas, peas, parsley and pulse , keep it chunky.
- Place mixture into a bowl and add seasonings, eggs, corn flour and cheese, mix well.
- Over a medium heat, spray oil spray and measure 1/4 cup of mixture, pat down with the back of a spoon , cook for 2-3 minutes each side
