Fritters - Cheesy Parmesan, Broccoli & Pea

  • 200 gms broccoli florets
  • 20 gms Parmesan cheese
  • 3 large garlic cloves
  • 3 spring onions
  • 1 cup thawed peas
  • 400 gm can drained chickpeas
  • 1/2 cup chopped flat leaf parsley
  • 2 Tbls cornflour gluten free for my GF friends
  • 2 eggs
  • Salt & Pepper
  • Pinch of chilli flakes optional
  • Oil Spray


  • To a food processor add broccoli, garlic, spring onion & process until fine, add chickpeas, peas, parsley and pulse , keep it chunky.
  • Place mixture into a bowl and add seasonings, eggs, corn flour and cheese, mix well.
  • Over a medium heat, spray oil spray and measure 1/4 cup of mixture, pat down with the back of a spoon , cook for 2-3 minutes each side
