
Quinoa Cups
Ingredients
- 3 cups cooked tricolour quinoa
 - 4 eggs
 - 100 gms Hans ww endorsed bacon
 - 1 cup raw spinach leaves
 - 125 gms raw grated pumpkin
 - 2 tsp mixed herbs or fresh
 - 100 gms low fat Feta cheese
 - Salt & Pepper
 
Instructions
- Dice bacon, chop spinach & crumble Feta
 - place into a bowl and add cooked quinoa.
 - Add seasonings, beaten eggs, mix together
 - Divide evenly between 9 muffin silicone muffin tray
 - Cook in a 160c oven for 20-25 minutes.
