Shakshuka
A one pan dish that’s easy and delicious for lazy Sundays
Ingredients
- 2 tins crushed tomato
- 1 large punnet sliced mushroom
- 1 large red Capsicum sliced
- 1 large yellow Capsicum sliced
- 1 red onion sliced
- 1 small/med zucchini diced
- 8 eggs
- Spray oil 3 second spray
- 2 tbls fresh sliced basil
- 2 tbls Fresh chopped flat leaf parsley
- Salt & Pepper
Instructions
- Spray a large fry pan with oil spray, and toss all the vegetables in, add salt & pepper, & cook until soft.
- Add the tins of tomato & herbs, and bring to the boil
- Make small Wells in the mix and crack the eggs in
- Turn down the heat to low, cover and cook until eggs have just set, no longer than 3-5 mins.
