Apple Raspberry & White Chocolate Muffins

Ingredients
 

  • 1 cup self raising flour sifted
  • 2 eggs
  • 1 tsp cinnamon
  • 1/3 cup castor sugar
  • 120 gms plain no fat yoghurt high protein like Chobani or Aldi yoghurt
  • 1/2 cup no added sugar apple purée or make your own
  • 1 punnet fresh raspberries
  • 15 gms Nestle white choc chips

Instructions
 

  • In a bowl whisk apple purée & sugar until slightly pale, add eggs (one at a time whisking in between)
  • Add cinnamon & yoghurt
  • Fold through sifted flour & fresh raspberries.
  • Fill a silicone muffin mould evenly
  • Top with white choc chips (a few on each muffin) & bake at 160c for 25-30mins or until a skewer comes out clean.

10 larger muffins at 4 Weight Watchers Smart Points (each)
