
Apple Raspberry & White Chocolate Muffins
Ingredients
- 1 cup self raising flour sifted
 - 2 eggs
 - 1 tsp cinnamon
 - 1/3 cup castor sugar
 - 120 gms plain no fat yoghurt high protein like Chobani or Aldi yoghurt
 - 1/2 cup no added sugar apple purée or make your own
 - 1 punnet fresh raspberries
 - 15 gms Nestle white choc chips
 
Instructions
- In a bowl whisk apple purée & sugar until slightly pale, add eggs (one at a time whisking in between).
 - Add cinnamon & yoghurt
 - Fold through sifted flour & fresh raspberries.
 - Fill a silicone muffin mould evenly
 - Top with white choc chips (a few on each muffin) & bake at 160c for 25-30mins or until a skewer comes out clean.
