One Pan Pasta Bolognese With Peas
Ingredients
- 225 gms dry rigatoni pasta
- 1 x 3 second oil spray
- 300 gms steggles turkey mince
- 1 red Capsicum diced
- 2 carrots diced
- 1 medium zucchini diced
- 1 medium brown onion diced
- 2 sticks celery diced
- 1 cup frozen peas
- 3 garlic cloves crushed
- 2 x 400gm tinned diced Tomato
- 2 cups water
- 1/3 cup fresh chopped parsley + Basil
- 1/2 tsp chilli flakes optional
- Salt & Pepper to taste
Instructions
- In a medium pan, spray with oil and add mince, onion & garlic, cook until brown
- Add all veg and cook until slightly tender
- Add seasonings, herbs, tomato, water and pasta, stir and reduce to a simmer with a lid on, cook until pasta is almost soft
- Add Peas, stir, replace lid simmer until pasta is fully cooked, approx 30 min meal
