
Chessy Corn Muffin
Ingredients
- 250 gms corn kernels, tin or fresh
 - 55 gms beg country cheese, 50% less fat
 - 1/2 small red onion, diced
 - 6 eggs
 - 2 tbs self-raising flour
 - 2 tbs fresh thyme
 - salt and pepper
 
Instructions
- Mix all ingredients together in a bowl and pour into silicone baking muffin moulds, bake at 180c for 25 minutes or until cooked through.
