Chicken & Rice Patties

Ingredients
 

  • 1 cup cooked rice brown or white
  • 500 g chicken breast mince
  • 3 spring onions finely diced
  • 2 tablespoons flat leaf parsley
  • 2 teaspoons of ground ginger or fresh
  • 1 garlic clove grated
  • 1 tablespoon kecap manis thick sweet soy sauce
  • Salt & pepper to taste

Instructions
 

  • To a medium sized bowl, add all ingredients and combine.
  • Place a non stick fry pan over medium flame to heat.
  • Use wet hands and an ice cream scoop to roll balls, place into the warm pan, and flatten, the mixture will be a little fragile at first.
  • Once seared on one side, flip to cook through, or place in a 180c oven for 5 mins after searing both sides.

Notes

You can also use oyster sauce as a substitute for Kecap Manis.
