Corn Pea & Pumpkin Fritters

I had some extra pumpkin cooked and needed using so I made some fritters, and they worked out amazing

Ingredients
 
  • 300 gms cooked mashed pumpkin
  • 4 Tbls self raising flour
  • 100 gms Perfect Italiano low fat ricotta
  • 1/2 cup frozen minted peas defrosted
  • 1/2 cup frozen corn defrosted
  • 2 eggs
  • Salt & Pepper
  • 1/3 cup fresh flat leaf parsley or basil
  • 2 x3 second spray olive oil
Instructions
 
  • Mix ingredients together in a bowl, spray a non stick fry pan with 1x3 second spray, 
  • Reserve the other 1x3 second spray half way cooking the batch
  • Scoop 1/4 cup fills of batter into the pan, cook on one side, flip and cook on other side, repeat until batter is finished, my batch made 13 fritters.
