Corn Pea & Pumpkin Fritters
I had some extra pumpkin cooked and needed using so I made some fritters, and they worked out amazing
Ingredients
- 300 gms cooked mashed pumpkin
- 4 Tbls self raising flour
- 100 gms Perfect Italiano low fat ricotta
- 1/2 cup frozen minted peas defrosted
- 1/2 cup frozen corn defrosted
- 2 eggs
- Salt & Pepper
- 1/3 cup fresh flat leaf parsley or basil
- 2 x3 second spray olive oil
Instructions
- Mix ingredients together in a bowl, spray a non stick fry pan with 1x3 second spray,
- Reserve the other 1x3 second spray half way cooking the batch
- Scoop 1/4 cup fills of batter into the pan, cook on one side, flip and cook on other side, repeat until batter is finished, my batch made 13 fritters.
