𝐋𝐞𝐦𝐨𝐧 𝐂𝐡𝐞𝐞𝐬𝐞𝐜𝐚𝐤𝐞 𝐏𝐚𝐯𝐥𝐨𝐯𝐚 𝐏𝐮𝐥𝐥 𝐀𝐩𝐚𝐫𝐭
Here’s a lovely little idea that’s perfect for sharing and easy on points so everyone can enjoy.
Ingredients
- 250 g reduced fat ricotta
- 200 g 99% fat free plain yoghurt
- If you are in NZ i recommend @cyclops_yoghurt (in Australia I use @yoproau )
- 1 lemon zest + juice
- 25 mini meringues
- 2 1/2 tsp dark choc chips
- 2 tsp icing sugar substitute
- 20-25 Fresh Raspberries
- 40-50 Fresh Blueberries
- 7 Fresh Strawberries halved
- 1 x Fresh passionfruit Pulp
- Fresh mint sprigs
Instructions
- In a small food processor add ricotta yoghurt, lemon zest & juice. Process until smooth.
- Spoon into a pipping bag with a star nozzle.
- Arrange meringues into a wreath shape.
- Pipe each with filling.
- Decorate with fresh fruit, choc chips & mint.
- Dust with substitute icing sugar
