Moist Banana & Choc Chip Cake

Oh my goodness this turned out to be AMAZING! Super rich & sweet so you don’t need much. But definitely worth making it and it’s such an easy quick bake! Hope you give it a go.

Ingredients
 

  • 1 cup self raising flour
  • 1 cup Kellogg’s original all bran
  • 1 cup 230g chopped pitted Medjool dates
  • 250 g 3 medium mashed ripe bananas
  • 1 egg
  • 1 cup unsweetened almond milk
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • 60 g Cadbury baking choc chips

Instructions
 

  • Mash banana into a mixing bowl, add all bran, chopped dates, cinnamon, vanilla, egg & milk, mix together.
  • Let sit for 5 mins.
  • Add 1/2 cup of flour at a time, mixing in between.
  • Pour batter into a lined 20x20 square baking tin, scatter over the choc chips & bake at 160c (fan forced)
  • 25 mins or until a skewer comes out clean.

Notes

It’s quite a decent sized serve
