Valentine’s Day Strawberry Tiramisu
Ingredients
- 500 g frozen sliced strawberries
- 1/4 cup sweetener of choice
- Juice of 1/2 small lemon
- 10 g freeze dried strawberries
- 300 g reduced fat ricotta
- 135 g large sponge finger biscuits see notes
- 150 g plain 99% fat free yoghurt
- 1 1/2 sachets of diet strawberry jelly
- 350-400 g fresh strawberries
Instructions
- Place frozen strawberries , lemon and sweetener in a saucepan over medium high heat uncovered and cook until reduced into a semi thick consistency- you’re looking for a jam texture.Once thickened, set aside to cool.
- Place the ricotta in a food processor and pulse to break up the large chunks. Add yoghurt and process until smooth.
- In a small bowl, Mix 1 sachet of strawberry jelly with 1 tbls hot water , stir until dissolved then add 3 tbls cold water. Pour into the Ricotta/Yoghurt mix and process until well combined.
- Spoon 1/2 the ricotta mixture in the bottom of a 6 cup 1.5lt rectangle glass Pyrex dish - or any dish of that size.
- In a shallow bowl, add 1/2 sachet of jelly crystals to 1 cup warm water.
- Dip each sponge finger into the warm jelly mix, and layer into the dish over the ricotta mixture.
- Spoon the cooled strawberry puree over the soaked biscuits, & spread out evenly.
- Add fresh sliced strawberries in a single layer , then top with the other half of the ricotta mix.
- Place the freeze dried strawberries into a blender, grinder or mini food processor and pulverise. Sprinkle over the top of the tiramisu - (easiest way is to use a sieve) the freeze dried addition, enhances the strawberry flavour.
- Decorate with fresh strawberries, cover and refrigerate for at least 6 hours to soften the biscuits.
Notes
Sponge finger biscuits are also called lady fingers or in Italian Savoiardi biscuits.
I bought mine from Coles, the large size works best, but use what’s available. I used Coles brand frozen strawberries, and freeze dried strawberries also purchased at Coles. See Instagram post for video Recipe can be found on the WW App
