Prosciutto wrapped Chicken Breast with Sweet Potato Mash, Broccolini & Sweet Corn.
- 1 medium Chicken Breast
- 2 slices of Prosciutto
- 1 cup steamed or boiled mashed sweet potato seasoned with salt and pepper
- 1/2 bunch Broccolini steamed
- 1/3 cup steamed corn kernels .
- To prepare chicken, wrap 2 slices of prosciutto around, and grill seam side down first, then flip and cook the other side.
- Cooking times will depend on the thickness of your chicken breast, the prosciutto should be crispy when cooked.
- No oil is needed if you use a non stick griddle pan.
