Waffles - Pumpkin

Whoโ€™s got a waffle maker? They just arenโ€™t for sweet waffles you know. Savoury ones are just as good, you can also switch out the pumpkin for potato.

Ingredients
 

  • 200 gms raw butternut pumpkin grated liquid squeezed out
  • 25 gms bega 50% fat reduced grated cheese
  • 50 gms Donโ€™s shaved honey ham diced
  • 1/4 Spanish onion diced
  • 1 egg
  • 1 egg white
  • 1/2 cup fresh spinach leaves
  • Salt/pepper
  • 2 x 3 second spray

Instructions
 

  • Mix ingredients together
  • Heat waffle maker and spray with oil spray
  • Once hot, spoon batter in, cook for 5-8 mins, or until as brown as you like on high setting

Notes

This waffle does not go crunchy and crisp but cooks lovely, and itโ€™s huge and yummy, take care when taking it out.
